چکیده

Fermentation of milk yields many other products apart from lactic acid. This study was carried out to monitor the progress of fermentation by measuring the total solute concentration i.e. osmolality in fermenting milk. Five samples each of raw milk, pasteurised milk and UHT (ultra-high temperature treated) milk were incubated aerobically without starter culture at 37°C for 3 days. Osmolality was measured by freezing point depression at the beginning of incubation and at exactly the same time for the next 3 days. Osmolality of raw milk (mean±SD) increased from 290.2±8.0 to 405.6±31.06 mOsmoles kg in one day and stabilized around this 1 value thereafter. For pasteurised milk, osmolality rose from 294.5±7.3 to a constant value of 403.4±18.2 mOsmoles kg in two days. Osmolality of UHT milk increased almost linearly from 289.3±3.3 to 472.7±10.1 1 mOsmoles kg over 3 days. The results showed that osmometry is a viable tool in monitoring the progress of 1 milk fermentation. Using this method, maximum rate of spontaneous fermentation was obtained with raw milk, whereas maximum fermentation potential resided in UHT milk.

Effects of Fat Supplementation and Chop Length on Milk Composition and Ruminal Fermentation of Cows Fed Diets Containing Alfalfa Silage

The aim of this study was to evaluate the effect of fat supplementation for enhancing milk conjugated linoleic acid (CLA) in early lactation without affecting ruminal fermentation. 24 Holstein dairy cows were assigned to a completely randomized design employing a 2 × 4 factorial arrangement. Factors were particle size (15 and 25 mm) and two different sources of alfalfa supplemented with and wit...

Effect of Rumex Sc on Ruminal Fermentation, Blood Metabolites and Performance of Lactating Dairy Cow

This study investigated the effect of Rumex Sc (commercial product which includes of Saccharomyces cervisiae, saponin and essential oils) on rumen fermentation, blood glucose, urea, milk yield and milk composition. Animals were offered a basal diet containing alfalfa hay (15.5%), corn silage (24%), beet pulp (7%) and concentrate (53.5%). Additionally, Rumex Sc was included in the experimental d...

Blood gases and metabolite content and ruminal fermentation in response to diets with different fermentability in Holstein dairy cows

The objective of this study was to determine the effects of diets having different fermentability on blood gases, blood metabolites and ruminal fermentation parameters in Holstein dairy cows. Four multiparous Holstein dairy cows (665 ± 25 kg BW, 170 ± 7.0 DIM and 15±1.5 kg of milk yield), fitted with rumen cannulae, were used in a 4×4 Latin Square design with 28-d periods. Corn starch and sucro...

Effects of yeast (Saccharomyces cerevisiae) supplementation on intake, digestibility, rumen fermentation and milk yield in Nili-Ravi buffaloes

Rumen Yeast® (RY; Saccharomyces cerevisiae), a live yeast strain, improves milk yield and composition and nutrients digestibility through balancing rumen ecosystem and increasing ruminal cellulolytic bacteria numbers in cattle. To examine the effects of dietary supplementation of RY in Nili-Ravi buffaloes, 16 buffaloes with 8 L average daily milk production were randomly divided into two groups...

Growth and Activity of Selected Probiotic Strains in UHT Milk

ABSTRACT: The growth rate of two probiotic strains with documented health effects was studied in ultra-high temperature treated milk separately and beside each other. The probiotic strains were Lactobacillus acidophilus (La-5) and Bifidobacterium lactis (Bb-12). Fermentation was followed for 12 h at 37 ˚C and the samples were analyzed for pH, titratable acidity and viable counts of probiotic ba...
